Big News….

I made this a couple of days ago and loved it!!! It makes great leftovers, tasting fresh even a couple of days later.  Great as a side dish or for a main meal.

Pumpkin Mac and Cheese (adapted from Better Homes and Gardens)

Prep time: 20 minutes

Cooke time: 30 minutes

  • 2 c. whole wheat pasta shells or similar pasta
  • 2 tbsp. vegan butter (i.e. Earth Balance)
  • 2 tbsp. flour
  • salt and pepper
  • 2 c. organic milk
  • 1 c. Asiago or similar cheese
  • 1-15 oz can pumpkin
  • 1 tbsp. fresh sage or 1/2 tsp dried sage
  • 1/2 c. bread crumbs
  • 1/2 c. grated parmesan

Preheat oven to 350.  Cook pasta according to package directions.  Meanwhile in a medium sauce pan melt butter.  Stir in flour and season with salt and pepper to taste. Add milk, stirring until thickened and bubbly.  Stir in Asiago, pumpkin, and sage.  Add to pasta and transfer to rectangular baking dish.  In small bowl combine bread crumbs and Parmesan.  Top pasta with mixture.  Bake for 30 minutes until bubbly and top is golden.

SS3: side crunches   3 sets 20 reps per side
scissor kicks   1 sets 10 reps

Now for some more exciting news….

I’m moving to Philadelphia!

Since the day I decided I wanted to become a nurse I have been enthralled with the idea of travel nursing.  Taking short 13 week assignments in amazing cities all around the country with all expenses paid.  SIGN ME UP!  A couple of days ago I accepted my first assignment at Alfred I. duPont Hospital for children.  Technically I will be living in the town of Wilmington, Deleware….

but it is considered a sister city to Philadelphia and it only about 2 hours from both NYC and Washington D.C. which means….I’LL BE CLOSE TO CHELSEAOpen-mouthed smile

I’ll be leaving New Year’s Day and start January 3rd.  I’m so freaking excited…I’ll finally be able to visit NYC not to mention all the fun stuff there will be to do in my new home!  I’ll definitely keep you posted and take lots of pictures of my new place.  I’m crossing my fingers that I have a free gym!
